Chocolatey Overnight Chia Seed Pudding



Chia seeds can be incorporated into meals many different ways. I love using them in baking, like in this Blueberry Chia Seed Morning Muffin recipe or in simpler ways, like this Overnight Chia Seed Pudding. As always, the flavors can be varied to your preference and the opportunities are endless for this quick and easy dish! Let's get creative!




Servings: 8        |        Prep time: 5 minutes       |      Cook time: 8 hours (resting)



6 dates (softened)

2 cups unsweetened vanilla almond milk

1/2 c chia seeds

3 tbsp cacao powder

1 tbsp vanilla

1 tsp sea salt



Soften dates by pouring a few tablespoons of boiling water over them and letting them sit in a bowl for 1 minute. Blend dates and almond milk in a blender at high speed. Add the rest of the ingredients and blend until creamy, about 2 minutes. Put in a medium mixing bowl and let sit in fridge overnight. Serve the next day with a few chia seeds sprinkled on top or fresh berries.
