3 sweet potatoes
1 T butter
1 T vanilla
1 T cinnamon
Pecans or Almonds (optional)
Pre-heat oven to 400 degrees. Stab sweet potatoes with a fork to allow steam to escape during cooking time. Place sweet potatoes on aluminum foil or baking sheet and place in heated oven. Allow potatoes to cook for 40 minutes or until fork or knife can easily be inserted. Another good measure of doneness is if the pre-existing fork holes start to ooze! This is the carmelization of sugars and the reason why we love them!!
When potatoes are done, remove and cut open lengthwise. Scoop out meat from the skin into a mixing bowl. The skins can be eaten or saved as a snack for a later day! Mash sweet potatoes and add butter, vanilla, and cinnamon.
Optional | Chop pecans or use sliced almonds. Roast on a medium-high skillet for 5 minutes and top sweet potatoes before serving.
